In-8 paperback, XII-519 pp. The author was cook to the Comtesse d'Auteroche and the Marquise de Courtavelle. He died in 1860, one year after the publication of his book. The book is divided into several parts: the definition and principles of cooking, basic preparations, soups, sauces, meat, fish, vegetables and fruit. For Lacam, editor of this new edition, he was the greatest Methodist of the century.
