RIBAUT, Jean-Claude - BOVIER, Edgard - DELESSERT, Pierre-Michel: "Edgar palace".
Lausanne, éd. Favre, 2009, ORIGINAL EDITION, gd. in-4, hardback, photo coul. cover, identical dust jacket, 233 pp. glossy paper, color illus. endpapers, many color and black photos, history of the establishment, "Edgard Bovier has been distinguished by the Gault-Millau guide (17 pts out of 20) "for his Mediterranean cuisine, which achieves real refinement in his hands". Chef Edgard Bovier's recipes are written with simplicity and clarity by an experienced gastronomic journalist, Jean-Claude Ribaut, famous columnist for Le Monde and author of several gastronomic books. The photographs are by Pierre-Michel Delessert, who has already taken photos for numerous other cookery books, many of which have won awards and been translated into various languages. Inaugurated in 1915, the Lausanne Palace is much more than a hotel; it is an institution, a meeting point for the city's inhabitants, as well as for high society from all over the world. So it's no coincidence that the presidents of the International Olympic Committee have made it their home since 1980. Equipped with several restaurants, as well as a SPA center, a private club and a high-tech conference center, it has not lost its Belle Epoque character and charm. The successful marriage of tradition and avant-gardism: a Palace that honors its 5-star status by pampering the well-being of its guests, offering them a haven of peace, refined comfort, sumptuous lounges and panoramic rooms overlooking Lake Geneva, in the heart of the city or on the lakeside.
Three restaurants, three styles, are today the meeting point for gourmets: La Brasserie du Grand-Chêne offers the continuous service of any self-respecting brasserie, in a warm, contained setting. First service at breakfast, and snacks at any time. Regional dishes and local wines go hand in hand. Here, too, you can let time pass in a friendly atmosphere. Open in daylight, the Côté Jardin restaurant offers fresh, light summer dishes. La table d'Edgard is a Michelin-starred restaurant. It's the natural elegance of an infinite amount of work, both in the dining room and in the decor. Its chef, Edgard Bovier, works with all the savoir-faire of haute gastronomy. Orange, plum, gold and silver are the colors that lend Edgard's table a natural elegance. It has become a favorite spot for gourmets, who also enjoy the magnificent panorama of Lake Geneva and the Alps".
