DUBOIS, Urbain. Grand livre des pâtissiers et des confiseurs - Lot 198
DUBOIS, Urbain. Grand livre des pâtissiers et des confiseurs. Paris, éd. Flammarion, 1928, eighth edition, 1 vol. gd. in-4, burgundy cloth boards, cold-stamped fillets on boards, gilt decoration, fillets, author and title on smooth spine, period binding, XXIV - 432 - (2) pp, heavy paper, illus. of 99pl. hors-texte of equipment, utensils, set pieces and ornaments (not as inscribed 96 pl.) including frontispiece "grand buffet de bal" in red and plate "division de la pâtisserie" in black and 415 drawings in black in-texte, list "œuvres complètes d'Urbain Dubois" 4 pp. in-8, pasted in before the alphabetical table, table of chapters, preface, articles by Jules Janin, Timothée Trimm and Jean de Nivelle, alphabetical table, "Répertoire des maisons et produits recommandés" (10 sheets of pink paper with illustrated advertisements dated 1935, 33rd year!), added after this 1928 edition! The author (1818 - 1901) came from the Rothschild kitchens, where he had been a pupil of Louis Haas, and had an incredible career working for the Emperor of Germany, King William and Queen Augusta of Prussia. This work is the counterpart of "la cuisine artistique" for pastry and confectionery, with superb full-page plates (the first edition dates from 1883, in 2 in-4 volumes). As indicated in the description, our copy includes the double plate "Grand buffet de bal" and the frontispiece "Division de la pâtisserie", which are often missing! All 99 plates are in very good condition. One of the author's most RARE titles. Very good condition of the binding (carefully restored by a professional!); foxing on the endpapers, but little or no foxing in the body of the book and especially on the plates! Some soiling on edges due to handling.
